For my second recipe a spaghetti sauce. this recipe was brought here from the old country by my grandmother and is at least 100 years old not many people make this today, there is a basic sauce and many options. Lets start with the basic sauce. You will need virgin olive oil, origano,basil, and garlic. I start with a 10 or 12 inch skillet covering the bottom of the pan with about 1/4 inch of the olive oil. with measurement nothing is exact using a little more is fine. I then put about 2 tablespoons of origano inthe palm of my hand then rubbing it with both hand over the oil dropping it in, do the same with 1 tablespoon of basil. you could also use a mortar and pestle if you choose. stir and bring mixture to a simmer. you then want to add the garlic depending on your taste you can use from 2 to 5 large cloves. I use the flat side of a chef knive placing it over the garlic and hitting it with the palm of my hand then removing the garlic meat from the hard ends and skin. you can cut the ends of the clove off and peel it. The garlic should be minced and added to the simmering oil and herb mixture. keep simmering and stirring until the garlic just starts to brown and remove from the heat. your basic sauce is now done and can be mixed with your cooked spaghetti. First option. I alwaysdo thisjust as your garlic starts to brown I mix a can of cannellini white kidney beans with the juice and a second can with the juice seperatedinto the basic sauce, stirring untill beans are warm, then mixing with my spaghetti, I always use a Durum wheat semolina one pound package of spaghetti. cook using your package instructions I always add a couple tablespoons of salt to the cooking water. when cooked about 12 minutes I pour the spaghetti into a colander run very hot water over it and shake to drain the water. place your spaghetti into a large serving bowl pour your basic sause with options over your spaghetti stir. I always add about 1/2 cup of a good grated hard cheese over everything. now eat. you can have a salud on the side. I will give the recipe for a couple salads in another thread. NOW OTHER OPTIONS. you can cook 1/2 of a small onion in the basic sauce before adding the garlic, you can sprinkle red peeper flakes over your large serving bowl. you can add small salud shrimp to the basic with or without the beans, you can add fried Italian sausage cut into one inch pieces to your mixture, or anything you like. any questions??
